Delicious Pear Recipes at Home: A Journey Through Flavor and Texture

The fruit and the sauce are served separately, and both should be well chilled before serving.

This is a festive way to make use of the gift pears that arrive at Christmas. It is impossible to eat them all before they spoil, so I use them in various dishes, and this is one of my favorites. It’s a great dessert and can be made way ahead of time; it keeps under refrigeration for as long as four days without deteriorating.

INGREDIENTS :- Serves 6

  • 8 tart apples, washed, peeled, and cored
  • Confectioners’ sugar
  • Powdered cinnamon
  • 1 tablespoon butter
  • 1/2 cup broken walnuts plus several extra for the sauce
  • 2 cups dry red wine
  • 1 cup sugar
  • Small piece cinnamon stick Rind of 1 lemon
  • 8 medium-size cooking pears, peeled, cut in half, and cored

Delicious Pear Recipes Step by Step

Step 1 Slice the apples and put them in a saucepan with just enough water to prevent them from sticking while cooking. Cook until tender. Add a little confectioners’ sugar and cinnamon and cook a few minutes longer. Pass through a fine sieve, or puree in a processor or blender. While the applesauce is still hot, stir in the butter and the nuts and set aside to cool.

Step 2 Make a syrup by boiling the wine, sugar, cinnamon stick, and lemon rind for 5 minutes. Add the pears and simmer until just tender. Cool slightly.

Step 3 Spread the applesauce on a large shallow platter. Place the drained pears symmetrically on top.

Step 4 Reduce the wine syrup by boiling rapidly until only a scant cup is left. Add a few broken walnuts to the sauce.

Step 5 The fruit and the sauce are served separately, and both should be well chilled before serving.
