Basic Muffins Recipe with Variations This recipe is just right for two people 4 biscuits apiece, because that’s how many you’ll want. They are great with sweet butter and honey any time of the day.

INGREDIENTS :- Serves Makes 8 biscuits
- 2 cups bran cereal “buds”
- 2 cups boiling water
- 1/2 pound plus 4 tablespoons
- margarine or butter
- 3 cups granulated or brown
- sugar (or a combination)
- 4 eggs, beaten
- Preheat the oven to 400°F.
Step 1 In a large mixing bowl, combine the cereal “buds” with boiling Water; set aside.
Step 2 Cream the margarine or butter and sugar; add the eggs and buttermilk.
Step 3 Add this mixture to the bowl containing the bran and water.
Step 4 Mix the soda and salt with the flour and stir into the bran mixture.
Step 5 Add the bran flakes and stir lightly. Bake in muffin tins with paper liners for 15 to 18 minutes.
Step 6 Test for doneness and remove.
Basic Muffins Recipe with Variations for Kids
Variations: Add 2 tablespoons of grated lemon or orange rind, or 2 cups of raisins, or 2 cups of chopped pecans to the batter.
Note: If the batter is refrigerated, simply remove the quantity desired and return the remainder to the refrigerator, but do not stir.
- 1 quart buttermilk
- 5 teaspoons baking soda
- 5 cups unbleached all-purpose
- Flour
- 1 teaspoon salt
- 4 cups bran flakes
Step 1 Flour and beat until smooth; do not overheat. Stir in the pecans. Pour into 6 well-greased 5- or 6-ounce custard cups.
Step 2 Bake until puffed and golden brown, 30 to 35 minutes.
Step 3 Meanwhile, stir ‘together the butter or margarine, honey, and lemon peel. Serve the popovers at once with the lemon-honey butter.
