Corn Batter Cakes Simple and Easy This old-fashioned corn cake recipe that comes from the hills of Kentucky is simple to make and tastes wonderful.

INGREDIENTS :- Serves 10 to 15 cakes
- 1 cup whole milk
- 2 tablespoons butter, melted
- 3/4 cup unbleached all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 egg whites, lightly beaten
Step 1 2 cups corn kernels cut from the cob and boiled for a few minutes, or canned whole-kernel corn, drained
Step 2 Combine the corn, milk, butter, and egg yolks.
Step 3 Add the flour, baking powder, and salt.
Step 4 If too thick, add a little more milk. When the flour, corn, and liquid are well combined, fold in the egg whites.
Step 5 Fry on a hot griddle or in a heavy skillet with plenty of butter.
Step 6 Serve with maple syrup or chicken gravy.
