Glazed Pineapple with Chocolate Sauce Recipe Step by Step Guide

The days of poking and smelling pineapple to find a ripe one are gone, for today all pineapple is picked ripe for the market. Just hunt for the biggest one you can find and then be sure to squeeze all the juice from the outer shell, because that’s where the sweetest juice is.
INGREDIENTS :- Serves 8 to 10
Chocolate Sauce
- 6 ounces unsweetened chocolate
- 1/2 pound butter
- 2 tablespoons dark rum
- 2 tablespoons strong, freshly brewed coffee
- 2 cups unsifted confectioners’ sugar
- 2 scant cups evaporated milk 1 teaspoon vanilla extract
Glazed Pineapple and Topping
- 1 fresh ripe pineapple
- 2 pints vanilla ice cream
- 2 cups confectioners’ sugar
- 11/2 cups heavy cream,
- 1/2 cup dark rum whipped
- 3 tablespoons Grand Marnier
- 2 tablespoons slivered almonds
Step 1 To make the sauce, melt the chocolate and butter with the rum and coffee in the top of a double boiler over hot water.
Step 2 Remove from the heat and stir in the sugar alternately with the evaporated milk.
Step 3 Return the double boiler to the heat and cook, stirring constantly, until the mixture is thick, smooth, and creamy.
Step 4 Remove from the heat and stir in the vanilla.
Step 5 Peel and core the pineapple, and cut it into chunks.
Step 6 Place in a chafing dish over medium heat and add the confectioners’ sugar and rum bit by bit, until the pineapple is glazed.
Step 7 Remove from the chafing dish and place in chilled, individual dessert bowls.
Step 8 Sprinkle a little Grand Marnier over each serving.
Step 9 Top with heaping tablespoons of vanilla ice cream and whipped cream, and sprinkle with slivered almonds.
Step 10 Serve with the chocolate sauce.
