Plums in Vodka Recipe : A Step-by-Step Guide

Fresh plums in season are preferable for this recipe, but a good grade of canned plums will do in a pinch. If you use canned plums, discard the canning liquid and heat the plums in the sugar syrup for only 2 minutes. They are already cooked and any additional cooking will make them too soft. The flaming vodka adds flavor to the plums, drama to the dessert, and a bit of excitement at the table. If you don’t want to go through the flaming process, cook the vodka over high heat for a few minutes to burn off the alcohol; allow it to cool before pouring over the plums.

- 1 cup sugar
- 1/2 cup water
- 1/2 teaspoon powdered ginger or 1 teaspoon finely minced fresh ginger root
- 2 pounds red, yellow, or blue plums
- 2 tablespoons vodka
- 1 teaspoon almond extract 1 teaspoon vanilla extract

Step 1 Put the sugar, water, and ginger in a saucepan large enough to hold the plums. Bring to a boil. Lower the heat and cook for 10 minutes, stirring occasionally, until the sugar is completely dissolved.
Step 2 Stem the plums, cut in half lengthwise, and remove the pits. Add the plums to the sugar syrup and cook until tender but still fairly firm (6 to 12 minutes, depending on the ripeness of the fruit).
Step 3 With a slotted spoon, remove the plums to a heat-resistant dish, such as a souffle dish. Boil down the syrup until it is reduced to about two thirds of its original volume.
Step 4 Pour it over the plums and allow to cool to room temperature. Do not refrigerate.
Step 5 When ready to serve, put the vodka and almond and vanilla extracts in a very small saucepan. Heat almost to the boiling point.
Step 5 Light the simmering liquid with a match, pour the mixture over the plums, and serve flaming.
