INGREDIENTS :- Serves 6 to 8
- 6 cups fresh, frozen or thawed blueberries
- 3 large strips lemon rind
- 1 cup sugar
- 2 tablespoons Grand Marnier
- 2 cups reduced cream
Blueberry Fool Recipe Step by Step
Step 1 Combine the blueberries, lemon rind, and sugar in a heavy saucepan and cook, covered, over moderately low heat for 5 minutes. Uncover the pan and boil gently until the mixture is thick and sticky, about 15 minutes. Stir occasionally.
Step 2 Remove the lemon rind and force the berries through the fine disc of a food mill. The consistency should be that of a thick fruit sauce. If it is not thick enough, boil the puree a little more, stirring, but do not let it thicken to a jam like consistency, as it will thicken when chilled. Chill for 2 to 3 hours. Add the Grand Marnier.
Step 3 Whip the reduced cream to form soft peaks. Partly fold the cream into the fruit, leaving a slightly striated appearance. Turn into a serving dish or into individual parfait glasses.
