INGREDIENTS

  • 2 pints (4 cups) fresh blueberries
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 3/4 teaspoon salt, divided
  • 1/2 cup water
  • 2 cups unbleached all-purpose flour
  • 4 teaspoons baking powder 1 cup light cream

Blueberry Slump Recipe Step by Step

Step 1 Wash the berries thoroughly in a colander and remove all the stems. Mix the sugar, cinnamon, 1/4 teaspoon of the salt, and water in a 6-quart Dutch oven with a tight lid. Add the blueberries to this mixture and bring to a boil over low heat.

Step 2 Meanwhile, in a mixing bowl, combine the flour, baking powder, the remaining 1/2 teaspoon of salt, and the cream to form biscuit dough. When the blueberry mixture starts to boil, drop the biscuit dough onto the hot liquid, a tablespoonful at a time, making sure the biscuits do not touch one another until they solidify.

Step 3 When all the batter is in the pot, cover and cook for about 20 minutes. Do not remove the lid during this cooking period. (You may need to lower the heat somewhat so that the pot does not overflow.)

Step 4 Serve at once with heavy cream spooned over each helping.

Note: You may substitute two 1-pound packages of frozen berries for the 2 pints of fresh. Just be sure to reduce the “juice” when cooking to enhance the flavor and insure that the consistency is not too liquid.
