Artichoke Balls: This is a very rich mixture to serve with cocktails. Add additional seasonings to suit your taste.

Artichoke Balls Recipe

Serves 5 to 6

  • 2 eggs, slightly beaten
  • Makes 24 canapés
  • 1/2 cup toasted bread crumbs
  • 1/2 cup grated Parmesan
  • Cheese
  • 2 garlic cloves, pureed
  • 2 tablespoons olive oil
  • 2-8 ounce cans artichoke hearts, drained and mashed

Artichoke Balls Step by Step Guide

Step 1: Saute the garlic in oil.

Step 2: Add the artichoke hearts and eggs and cook over low heat for about 5 minutes, stirring constantly. Step 3: Remove heat and add the crumbs and cheese.

Step 4: Roll into individual balls, using about 1 teaspoon of the mixture for each ball.

Step 5: Chill until firm. Roll the 15 minutes balls in additional cheese and crumbs and bake for 10 to from in a 350°F oven. Serve with picks.
