Brandy Sauce Recipe

INGREDIENTS :- Serves

  • Makes about 2 cups
  • I/4 pound softened butter      
  • I egg, separated
  • 11/3 cups sifted confectioners’         
  • 2 tablespoons confectioners’ 
  • 1/2 cup heavy cream
  • Pinch salt

Step 1 Blend the butter with the sugar, adding the sugar a little at a time, until smooth.

Step 1 Add the salt and egg yolk and beat well.

Step 2 Cook over hot but not boiling water, stirring constantly, until the mixture is light and fluffy.

Step 3 This takes 8 or 9 minutes.

Step 4 Remove from the heat and blend in the cognac.

Step 5 Let the mixture come to room temperature; then chill.

Step 6 When chilled, beat the egg white to soft peaks and fold in.

Step 7 Whip the cream and fold in just before serving.

Note: If refrigerated, warm before using or the mixture will be too stiff to pour.
