INGREDIENTS :- Serves 8

This is one time when the frozen berry is preferable to the fresh or just as good anyway. For my money, fresh blackberries should be eaten “as is” with some heavy cream and a sprinkle of sugar. Actually, they are best if you just eat them as you pick them.

  • 5 cups fresh or thawed frozen
  • 1 tablespoon rosewater, or to blackberries
  • Taste -3/4 cup sugar
  • 21/2 cups heavy cream

Blackberry Fool Recipe Step by Step

Step 1 Combine the blackberries and sugar in a saucepan and cook, covered, over moderately low heat until the sugar melts and the berry juice be­gins to run. Stir once or twice.

Step 2 Pour the berries into a sieve over a bowl; press them but do not mash them through the sieve to extract the juice. Return the berry syrup to the saucepan and boil it until it is thick and sticky.

Step 3 Mash the berries, or press them through the medium disc of a food mill, in a bowl. Stir in the thickened syrup and chill. Add the rosewater.

Step 4 To make reduced cream, pour the cream into a saucepan and boil it very gently for about 10 minutes, stirring often, for as long as necessary to reduce it in volume to 2 cups. Pour the cream into a clean jar and let it cool. Chill, covered, for 2 to 3 hours in the freezer. Before using, whisk in the solid layer on top.

Step 5 Using an ice-cold bowl and a whisk; whip the reduced cream to soft peaks. Gently fold the cream and fruit together to partly mix them, leaving streaks of color. Turn the “fool” into a glass serving dish and chill for 2 to 3 hours before serving.
