Step 2: Place over warm water and beat with a wire whisk, increasing the heat of the water, and continuing to beat until the mixture is thick and creamy.
Step 3: Do not allow to boil. Beat in the butter. Remove from hot water and mix in the cream and pepper. Keep the sauce hot.
Step 4: Wash the asparagus carefully and steam over boiling salted water until tender-crisp ( about 7 minutes).
